Traditionally broilers go through a hot water bath before defeathering. The result was a dirty soup which caused high levels of cross contamination.
This has come to an end with the introduction of the AeroScalder by Marel Stork, currently at EuroTier. The new system received a gold medal at the exhibitions innovention competition.
Marel Stork director Ton de Weerd is very proud to show the new scalder which uses hot humid air at a controlled temperature and the amount of water being sprayed at high pressure on to the skin, without damaging it. The system minimises the use of water (-70%) and saves energy (-40%).
